Seasonal Carbohydrates

We've all heard the benefits of eating seasonally-affordability, sustainability, not to mention the nutritional boost a fruit only has to offer when it's in season.

As a carbivore, I know the value of my starches-that also means I cannot ignore the values of other food groups. A woman cannot survive on bread alone, so why not mix variety into the bread itself? So let's spice up our morning carbs with some seasonal fruit!

Lemon Strawberry Cakes
Turn stove top to medium heat-grease with butter or Pam.

1. Whisk 1 1/2 cups flour, 3 tbs sugar, 1 tbs baking powder, and 1/2 teaspoon salt
2. Whisk 1/2 cup milk, 1/2 stick melted butter, 2 eggs, and 1 teaspoon vanilla, 1 cup cottage cheese, 2 teaspoons grated lemon zest.
3. Whisk in the flour mixture (not completely)
4. Ladle 1/4 cupfuls-cook on that side until bubbly. Flip and cook until golden brown.
5. Top with sliced strawberries and honey!

Are you a health-conscious carbivore? Try
1. Substituting 1 1/4 cups plain yogurt for the buttermilk
2. Make your pancakes whole wheat! Add 3/4 cups each all purpose and whole wheat flour.
